Well, as far as I understand, the kosher laws of the Old Testament/Torah were the old laws.
If the old laws were not followed, the individual would not be able to go to heaven (unless a sacrifice was made). Now, Jesus, being the final sacrifice, changed the rules a bit.
No longer was it nearly impossible to get to Heaven, but only through a relationship with Christ could man achieve eternal life. With this in place, the old laws were admonished.
Keep in mind, I am not a minister or anything along those lines, but this has always been my interpretation.

EDIT: To the Muslim fellow above: just a belief in Jesus alone does not assure your admission to heaven. After all, even the demons believe in Jesus. Just because you believe him to be a prophet does not mean you are saved (in a Christian viewpoint).
Because Christians are able to pick and choose which part of their holy texts they’d like to follow. The blood and guts horrorshow stuff of the Old Testament… well that’s a little too difficult to follow in this crazy gogo lifestyle we lead. Let’s just stick to the easy parts, you know, go to church once a week and get baptized and you’re off to the races!

Torah/low can mean both the command given and the book written. For the remaining of this answer, I will use it in the meaning of command.
Those laws were given as part of a covenant. In mount Sinaï, the Torah is given as part of what Jews as to do to keep the covenant. In this laws, there are dietary laws and the sacrificial system.
The prophet Jeremiah spoke from God about a new covenant to come, when this covenant will come, necessarily the laws bound to it will become obsolete.
The psalms 110, talk about someone who is both king and priest. But the laws said that the priest are from Levy and promise to David is that his dynasty will always reign. So either the laws as to change or the promise of God has to fail or Psalm 110 is false.
The new covenant, like the first, was made by blood, not of animal but of Jesus.
With this new covenant, priest and king as united in Jesus who came from David and does not need to be a Levite.
He is the King, the sacrifice, and the priest all together.
In this way, the two voice of God of your Tanach are made one. The voice of Sinaï which said “do this and you will live, don’t do it and you will die” and the voice of mount Zion who says “I love you anyway, whatever you do, as bad as you can be, I love you.”
Jesus took on him the punishment of the voice of Sinaï so that the voice of Zion can be true without God sacrificing his justice.
You are Jewish. You are taught to read and to question the bible. In your religion there are no questions that can not be answered by the bible. (Not speaking of the modern Jewish community of course. Their religion is about as washed down as the Christian faith.) Still, your faith is based on lies. There were no Jewish slaves in Egypt. There was no Moses. The Jews in Egypt were free. There was a large community of free Jews in Egypt and many had positions of power. There was no Exodus. There is no historical evidence for any of this.
Archaeologists have gradually concluded that much of the early history of the Bible is purely mythical. The Patriarchs are mythical, the Exodus is mythical, and the Conquest is mythical. The main debate nowadays is over how historical the Biblical accounts of Kings David and Solomon are. But the debate over mysticism is not likely to proceed much past them, since the Dual Monarchy period is reasonably well-supported from outside sources, even though the Biblical account of that period is rather editorialized.
The Exodus and the Conquest not having happened as described in the Bible has a certain consequence that archaeologists have not talked much about.
That Moses was largely or entirely mythical.
That is because much of his biography, if not most of it, is tied to events that never happened, meaning that a historical Moses could not have confronted the Pharaoh and led the Israelites to freedom. So if there was a historical Moses, was he some now-obscure local leader who got embellished by generations of myth-makers?
That would also explain why Mose’s burial site has never been found; even Deuteronomy’s writer(s) did not claim to know where it was (“He buried him in Moab, in the valley opposite Beth Peor, but to this day no one knows where his grave is.”, Deut. 34:6).
With that said, the Christian faith has never followed the teachings of the bible. You are of course correct in your assertion that they should, if they are Christian, be following the laws of the Mythical Moses. In the words of their own “Savior” who was a Jew of the Gnostic breed and actually from Egypt where he spent his years after age 12 in the Jewish community there…. (All archiologically verifiable.)

Jews and Christians don’t follow the same texts. As Jews, we follow the Tanakh, the original Jewish, Hebrew scriptures. The Jewish laws are binding on Jews – they have never, ever been binding on non Jews.
Christians canonised an entirely separate set of scriptures. Their ‘old testament’ is NOT our Torah. The OT is a Church-produced, Christianised, at times MIStranslated, totally REarranged dilution OF our Tanakh.
Jews believe that if they follow HASHEM’s comandments then they will pass on to heaven. Christians believe that if they believe in Jesus then they will go to heaven, making the rules in the Torah seem no longer binding…

Because The New testament states otherwise. Since you are Jewish and Jesus is not considered your messiah, the new testament has no relevance to you
